8 inches Square Pan ( makes 20 rolls-45 gram)
Bread Flour, 450 grams/3.75 cups
Sugar 2-4 tbsp, 50 grams
Honey 1/2 tbsp ( optional), 15 gram
Salt 1 1/2 tsp. 7.5 gram
Instant Yeast 2 ¼ tsp or 7 grams
Egg ( app. 56 grams), 1-2 eggs depending size
Milk 300 ml
a half stick( 4 tbsp) Unsalted butter, cubed, 50 grams
1. In a bowl, mix milk, salt, sugar, honey( optional, honey helps with moisture retention), and cubed butter.
2. Heat up the mixture in a microwave to reach between 85 f to 95 f.
3. Add egg(s) directly to the heated mixture and stir well.
4. Add yeast directly to the #3 and stir well so there is no lump of yeast
5. Add all bread flour and mix well until there is no dry flour. The dough would be somewhat wet
6. Cover the dough tightly with a lid or wrap and leave the dough at the room temperature for 20 minutes
7. After 20 minutes, use a silicone spatula( or any other tool of your choice), push down the edge of the dough. With lightly wet hand and fingertips, grab a portion of the dough and stretch it upward. Fold the dough over toward the center of the bowl. Rotate bowl while continuously stretch and fold toward the center. The dough would be sticky. Leave the dough at the room temperature for another 20 minutes
8. after 20 minutes, repeat #7. After completing stretch and fold for the second time, wet your hands and fingers with water. Lift the dough a little bit and tuck underneath to form a clean skin on top. Leave the dough at the room temperature for 30 minutes.
9. Flour the surface where you would scrape the dough from the bowl. Gently scrape the dough to the floured surface. Flour lightly the top of the dough and divide into 20 pieces
10. Shape each piece by placing the ball of dough seam-side down on your work surface. Cup your hand over it, and lightly roll it into a ball, using the friction of board to help with the rounding.
11. Line up all rounded dough balls in your prepared baking pan and cover them with plastic wrap or sheet. Alternatively, you can use clean tea towels. Leave them at the room temperature for 30 minutes or until about doubled in size.
12. Brush with the melted butter and sprinkle with flake sea salt( optional).
13. Preheat the oven to 340 F
14 Bake the rolls for 13-15 minutes or until golden brown
