French Spiced Bread | Easy and Quick Holiday Treat

This recipe for French spice bread is super easy and very quick to make. No special ingredients or special tools necessary, and no need to wait for the dough to rise. It is perfectly sweetened with honey and is somewhat dense cakelike bread with holiday spices. I love having this bread with a cup of tea and coffee. When you try, please let me know what you think. Ingredients

 

  • 1 ¾ (250 grams) cups all-purpose flour
  • 1 cup (100 grams) almond flour
  • 1 teaspoon baking soda
  • 1 teaspoon ground ginger
  • 1 ½ teaspoons ground cinnamon
  • ½ teaspoon mace, if you cannot find, substitute with ¼ teaspoon of nutmeg and allspice 
  • ½ teaspoon of salt and pepper
  • 8 Tablespoons (1 stick) salted butter plus more to coat the pan
  • 1 cup honey
  • ½ cup whole milk 
  • 2 large eggs
  • 2 to 3 teaspoons finely grated citrus zest (lime, orange, or tangerine)
  • 1 tablespoon finely grated, peeled fresh ginger
  • 2 tablespoons finely chopped crystallized ginger

 

 

 

Instructions

 

  • Place the oven rack in the upper-middle position and preheat the oven to 325F. Melt the butter in the microwave oven. Coat the bottom and sides of a 9-by-5-inch loaf pan with melted butter.  set aside. 
  • In a bowl, whisk or stir together the two kinds of flours, salt, pepper, baking soda, cinnamon, ground ginger, and mace.
  • In a large bowl, whisk together melted butter with the honey until well combined and smooth. Add the zest, fresh ginger, crystallized ginger, milk, and eggs. Whisk until well combined.
  • Add the flour mixture to the wet ingredients. Fold until dry flour is no longer visible. Transfer the batter to the prepared pan. Bake for 65 to 70 minutes, until firm (touch to test) and a toothpick inserted in the middle comes out with a few tiny crumbs or a bit of moisture attached. 
  • Cool on a rack for 10 minutes before unmolding. Let cool completely, 1 to 2 hours, before slicing with a bread knife and serving.
