Easy Vegetarian Shepard's Pie | Perfect Comfort Food for Cold Days!

The Shepard's Pie is a hearty and savory dish of cooked minced meat topped with mashed potato and baked or broiled. I love making this dish because it is  so good, warm, and comforting food, especially for fall and winter. My version of Shepard's Pie is vegetarian friendly so my loved one and vegetarian friends can enjoy it with me.    If you do not have or choose not to use Beyond Meat Ground Beef, use your favorite meat substitutes like pea protein, jackfruit, lentils, black beans, chickpeas, etc. And more mushrooms would be delicious!   If you are a meat eater/lover, no worry, just use ground meat instead of vegetarian meat. Also, use regular broth and milk. All is good. No Knead Artisan Bread

This no-knead artisan bread recipe needs very simple ingredients and requires no special tool.  This bread has the great golden crust and soft, flavorful interiors, and open crumb texture.  I like the original overnight method, which require the dough to rest 8 to 24 hours. The long proofing at room temperature does all the work to develop the flavor and structure of this bread if you choose to use the overnight method. The faster method requires just a short rise, like 2 hours and produce the bread with somewhat close crumb texture. It will be still very delicious. Easy Crusty Onion Chive Bread | So Delicious and No-Knead

This onion chive bread recipe needs very simple ingredients and requires no special tool.   It is super easy and fast bread recipe with short rise time ranging from 1 ½ hours to 2 hours. Best Soft and Chewy Oatmeal-Raisin Cookies | No Chill, No-Mixer, and Make-Ahead

Home-made cookies are the best! This is one of my favorite easy dessert or sweat treat recipes in any time.  I hope you try my recipe and let me know how yours turns out.  You can substitute raison with other dry fruits like cranberry or cherry. If you like to add something crunchy, e.g., nuts. chopped walnut or pecan would work very well.  This Oatmeal Raisin Cookie is also Make-Ahead Cookie Dough.  You make your cookie dough per instructions in the recipe below and then simply scoop onto the parchment paper. Please your prepared dough in your freezer until the dough is solid frozen. In a bowl, mix milk, salt, sugar, honey( optional, honey helps with moisture retention), and cubed butter. 2. Heat up the mixture in a microwave to reach between 85 f to 95 f.  3. Add egg(s) directly to the heated mixture and stir well. 4. Add yeast directly to the #3 and stir well so there is no lump of yeast 5. Add all bread flour and mix well until there is no dry flour. Mixed Berry Jam with only 3 Ingredients

 Home-made jam taste better than store-bought jam. I find commercially made jam too sweet and sometime disturbing that the first ingredient of jam is typically sugar or something worse (e.g., high fructose corn syrup). This home-made jam does not have any added gelling agent or food preservatives. Also, it allows a jam maker (Us!) to customize in terms of putting a reasonable amount of sugar, selecting your favorite fruits, and adding holiday spices we love. Vegetarian Japche | Korean Stir-fry Glass Noodles: Super Easy and Tasty!

Japchae is a traditional Korean glass noodle dish made with sweet potato starch noodles, stir fried colorful vegetables and protein. It is served on special occasions or gatherings. Feel free to add your favorite vegetables, meat, or seafood as what your heart desires. Mine is vegetarian, vegan friendly but yours do not have to be. Perfect English Muffins | Super Easy and No Oven needed

An English muffin is a small, round, and flat bread from yeasted dough. What is great about an English muffin is that you do not need an oven. It is cooked/baked on griddle, skillet, or pan on the stovetop.  There is no need to turn on the oven in a hot day!!  You can also have it slow rise in a refrigerator overnight. Homemade English muffins are the best. Once you make this, there is no turning back to store-bought English muffins. I use vegan butter and almond milk. But your do not have to be. I love tamales because they are so good, warm, and comforting food, especially for fall and winter. However, it requires a lot of work and time to do soaking, wrapping, stuffing, and steaming individual tamales.  In addition, it is very difficult to find tamales or tamale pie without animal-based meat and lard.   So, my alternative way of enjoying tamales is to make a tamale pie with the ingredients that are vegetarian friendly so my loved one and friends can enjoy it with me. I made this dish many times for my work and friend gathering. No-Knead Focaccia Bread!

I like homemade focaccia. This no knead focaccia is super easy and so versatile.   You can dress it up with different ingredients or eat with dipping sauces of your choice. I also like to use this as a base for a Detroit-style pizza. If you prefer thicker focaccia, I recommend using the 9"x13" pan. Crusty Beer Rye Bread with Caraway Seeds

This beer rye bread is one of my favorite bread recipes that requires no special tool and no-knead.   The long proofing at room temperature does all the work to develop the flavor and structure of this bread so I love making this bread when the weather and temperature are mild (not scolding hot).   What is great about this bread receipt is time, beer, and yeast do all the work for you to have this incredible rustic and crusty bread.   Once you make this, there is no turning back to store-bought so-called artisan rye bread. As for beer, I typically use IPA beer because that is what I like.   Select beer you like to drink. I think stronger the flavor of beer. It will bring the extra flavor and smell in your bread.
